After the scathing comments about "mummy bloggers" that appeared courtesy of Ms Jones in yesterday's Daily Fail (I refuse to link to them and give them any SEO credit at all for this) I felt slightly bad about today's post being about cupcakes, but still. I may be one of these parents who stays at home knitting and baking whilst blogging and bringing up my children, but that's completely fine with me. And also with my husband who gets to eat the fruits of my baking activities when he comes home from work.
Little Miss C has really got into baking recently and one of the simplest recipes to follow with her is what my family refers to as "Gran's weight of two eggs" recipe. It really is easy – all you need is two eggs and some margarine, self raising flour and sugar. You find out how much your two eggs weigh and then use an equal weight of all the other ingredients. Cream together the margarine and the sugar to start with and then mix in the eggs and flour. To make them slightly healthier we then added a couple of handfuls of raisins or sultanas (a recipe addition from my sister) before putting them into bun cases and popped them in the oven until ready.
As the recipe is based around the weight of the eggs it doesn't make an exact number of buns, but I've always managed to get at least 14 out of it. What that does mean is that if you use a normal 12-hole bun tin there's enough mixture to take account of the natural wastage that occurs when you bake with a toddler!
These may not be exotic cupcakes with fancy icing, but they are still incredibly yummy and great for energy boosts whilst breastfeeding a little one.
