It’s all got rather foodie here on the blog hasn’t it?
I can’t even pretend to be some great culinary whizz in the kitchen, but all these years of eating and feeding others, plus buying a crazy number of cook books, does at least seem to have taught me something. I think I’ve got a pretty good understanding of what things go together and I can get quite inventive with using the contents of my fridge and cupboards to pull a meal together quickly.
Being able to produce a meal quickly seems to be the key thing as my kids get older. So many evenings are spend playing mum taxi and driving them from one activity to another, and therefore finding time to cook a meal from scratch can be difficult some days. I’ve built up a bit of a repertoire of quick meals for us, but it’s always good to have some new alternatives up my sleeve. I was therefore keen to join in the BritMums Rustlers Burger Hacking Challenge to see how I could use the Rustlers Southern Fried Chicken Burgers Twin pack as the basis of a meal.
To me the key thing about this meal is that it had to be quick, easy and tasty. I didn’t want to have to spend ages preparing something or waiting for things to cook. The Rustlers chicken burgers themselves are cooked in the microwave and take less than two minutes to cook (plus another minute of standing) and I really didn’t want to have to spend long preparing things.
Blue Cheese Slaw Southern Fried Chicken Burger
Burger and chips is a pretty classic food combination, but I wanted to add even more of a southern twist to it, whilst also taking into account my current addiction to sweet potato fries.
Ingredients
Twin pack of Rustlers Southern Fried Chicken Burgers
Pot of pre-made coleslaw
Wedge of blue cheese
Bag of frozen sweet potato fries
Method
Firstly pre-heat the oven and pop the sweet potatoes fries in. This usually takes about 20 minutes in total, but check the bag for exact instructions.
You can probably leave the fries in the oven for about 15 minutes so this is the perfect opportunity to either go and nag the kids to do their homework, or to shut the kitchen door, pretend you’re busy and sit down with a magazine and a cuppa in peace!
Once you’ve got about five minutes left for cooking your fries it’s time to spring into action. Pop the burgers in the microwave as per the instructions on the label, taking into account your microwave power. At the same time, pop the bun parts in your toaster on the lowest setting, just to give them a nice level of crisp.
Open up the blue cheese and chop into small pieces. Then put the coleslaw in a bowl and stir the blue cheese through it.
Once the burgers have finished in the microwave, assemble them in the buns with the blue cheese coleslaw on top of them. Serve with sweet potato fries and more blue cheese slaw on the side.
Hey presto – one very quick and simple blue cheese slaw southern fried chicken burger. And you even had time for a cuppa whilst making it!
