Jaffa Cake Cupcakes with HomeSense and #RaiseSomeDough

Red Nose Day Apron

It can’t have escaped your attention that Red Nose Day is back for 2015 and come Friday 13th March there will be people up and down the country wearing red noses and doing something funny for charity.

My big bit this year is going to be the Comic Relief Danceathon that I’m taking part in the weekend before – please sponsor me here, hint hint! I’m more than a bit scared at the idea of 6 hours of dancing, especially as at the moment I’m into week two of some flu like thing that’s really knocked me for six and stopped all my running too.

Comic Relief isn’t just about physical stuff though. There are so many great ways that you can help to raise some money for a great cause. This year, for the second time, HomeSense are a proud partner of Comic Relief and they’ve produced some great limited edition homeware products to encourage bakers to get messy in the kitchen and bake something funny for money. The range is available in store or online.

Red Nose Day Apron

British fashion designer Henry Holland has designed two limited edition aprons for Red Nose Day and they’re the prefect thing to wear if you’re hosting a cake sale or tea party for Comic Relief. I’ve been sent one of these aprons which features the famous Orson Welles quote “Ask not what you can do for your country. Ask what’s for lunch.” Our school bake sale for Comic Relief may be a few weeks away yet, but I was inspired to try out something that I wanted to bake after someone brought some along to last week’s WI meeting – Jaffa Cake Cupcakes. After all, who doesn’t love a Jaffa Cake?

This was totally experimental and just came about from a conversation that some of us had at the end of the meeting, but here goes. Little Miss C decided to help as well with the first part of the bake and we’ve also tried to catch it on film too.

Ingredients:

  • Two medium sized eggs (before you start you need to weigh them)

The weight of two eggs in:

  • Sugar
  • Margarine
  • Self Raising Flour

Plus

  • One packet of orange jelly
  • One large bar of dark chocolate

Method:

Cream together the margarine and sugar in a bowl. Add the eggs and mix. Add the flour and mix until all combined.

Put into bun cases and bake for approximately 15 minutes at 180 degrees C. Depending on your own oven you might need to alter the time slightly until done.

Make up one packet of orange jelly as per the instructions on the packet.

Take a large container where you can pour in a thin layer of the jelly. I used a large lasagne dish and just put in enough that it covered the bottom with a layer that was about 3mm thick. Put this in the fridge to set.

Once your jelly is set and your cakes cool from the oven use a plain scone cutter to cut circles from your jelly layer. Place one disc of jelly on top of each cake.

Break the chocolate and put it in a bowl over a pan of hot water. With the pan on the heat continuously stir the chocolate until it is melted. The pour the chocolate very carefully over the top of each cake. Ideally it should run up to the edges of the bun cases, but depending on how much your buns have risen and how liquid your chocolate is this may be the messy part.

Let’s just say it tasted better than it looks.

Once the chocolate has set, tuck in and enjoy your own Jaffa Cake Cupcakes.
