Scone based pizza

T make the scone base:

Ingredients:

  • 200g self-raising flour
  • Pinch salt
  • 50g grated cheese
  • 50g butter
  • 1/2 beaten egg
  • About 160ml skimmed milk

Method:

  • Pre-heat oven to 200 degrees
  • Place flour in mixing bowl and add pinch of salt
  • Add the butter to the bowl and rub into the flour with your fingertips
  • Mix in the grated cheese
  • Make a well in the centre and add the 1/2 beaten egg. Mix
  • Add sufficient milk to form a soft dough. Mix with a knife.

This volume of ingredients will either make one large pizza or two smaller ones. Shape by hand or roll out as desired.

To complete the pizza:

Spread tomato puree across the base using the back of a spoon. Then top with grated cheese and anything else you fancy. Tuna, ham, pepperoni, tomatoes, peppers, mushrooms, onions, olives, anchovies or anything else you can find in the fridge!

Bake for about 10-15 minutes. Remember that as the pizza has a scone base it may be quite thick in the middle and you need to ensure that the centre of the base is cooked through.

This recipe was one that I suddenly remembered in the middle of this afternoon. It must be nearly 20 years since I first made it in Home Economics at secondary school and today I had to go back to my old exercise book from the time for the original recipe! Based on the contents of our fridge today we just topped it with puree, cheese and mushroom. I would have taken a photograph when it came out of the oven, but to be honest it just smelt so good that LMC and I ate it before I had chance to get the camera out!
