I needed to make something to take along for the tea break at Sunday's WWA working party so I decided to look in some of my newer cook books for inspiration. I thought that flapjack may be an option, but as I've written about before my experiments with flapjack haven't always been that successful.
All the recipe's in The River Cottage Family Cookbook are designed so that they can be made by children (with adult supervision), so when I found a flapjack recipe in there I thought I should have a reasonable change of it working out OK.
The difference with Nicola's Zesty Flapjacks is the addition of lemon and orange zest and soaking the raisins in the juice of an orange and half a lemon. Pine nuts are also added alongside the oats and raisins making it a slightly different type of flapjack.
Te recipe was very easy to follow (as you'd hope with something that children should be able to follow!) and it smelt delicious whilst making. I really liked the taste, although possibly it was actually a little too zesty. It certainly seemed to be well received by the working group though. Mr C wasn't too sure about the pine nuts, but that didn't seem to stop him going in for a second piece!
