A while back Mr C and I decided that we should put some more time into our cooking. We were getting into the habit of eating out quite frequently, and while we enjoyed it, it certainly wasn’t doing our waist line, or bank balance, much good at all. Logically, if you are replacing eating out, then you can look to spend a fraction of that money on good quality ingredients and cook at home instead and get just as tasty a meal.
We therefore started making the most of various cookbooks that were starting to gather dust on our kitchen shelves and started being a bit more adventurous in the kitchen. One book that we particularly enjoyed using was 101 Cheap Eats from the BBC Good Food range of books. All the recipes in this book (and the others we have in the range) are very straight forward, require relatively simple to get ingredients and are really, really tasty!
Tonight I cooked the corn stuffed tomatoes. The ingredients were quite simple, as shown below (plus a can of sweetcorn that I forgot to get out at the critical photo moment!)
Once you have scooped out the insides of the beef tomatoes the rest of the recipe is very simple and just involves frying things together (leek, rosemary and bacon first, followed by bread chunks, cheese, sweetcorn and parsley) before placing it inside the tomato skins and into the oven.
The finished dish was incredibly tasty and (if you try to ignore the amount of cheese that goes into it!) a good way towards reaching my 5 a day fruit and veg total! Definitely a recipe we would repeat.
