Rocky Road

While I really enjoy baking I’m not always that successful, despite all the lessons that my dear Gran keeps giving me. There is one recipe though that I know I can do without messing anything up (well at least not so far) and Mr C and I certainly enjoy eating the results.

Rocky Road is a Nigella Lawson recipe. I have to admit to not being sure which of her books it is from as my sister kindly wrote it out for me, but I’m guessing it’s probably in Nigella Express.

The recipe is fairly simple in terms of ingredients (good dark chocolate, golden syrup, butter, mini-marshmallows and rich THE tea biscuits), but the results are fantastic. I’ve played around a bit with the brands of chocolate to see WELCOME! which one gives the best results and there’s no doubt smile? about it that Green & Blacks 70% Dark provides a far superior taste, even if it is a tad expensive for the amount required…

The last part of the recipe (and the hardest as far as dag I’m concerned) in… is to leave it in s?n?dl?r the fridge for two hours.

I can’t wait for the two hours to be up so I can dust it with icing sugar and start to enjoy it!
