My sister always swears by the recipes that you get in the freebie magazines that you find near the till in the big supermarkets. The ones produced by the supermarkets themselves. Now I have to admit that in many ways she's much more organised than me and will actually work through the magazines and clip out recipes that she wants to do. Then again she doesn't have two kids so has a bit more spare time then I do!
When I was in Tesco the other week I saw the August – September edition of their Real Food magazine and thought it about time to give one of these magazines a go and I've rather pleased I did. We've had some lovely successful meals from it so far and I've also marked out a few others to try too.
One of the most successful also helped us to use up some of the homegrown courgettes that we've recently been bringing in from the garden – Lemon, Chilli and Courgette Naan Pizza. The full recipe is on the Tesco Real Food website (as linked) but that serves four so I've slimmed it down to feed just two of us. It's a nice simple evening meal, with a bit of a kick to it, but with a nice simplicity at the same time.
Here's my slightly modified list of what you need to make it for two:
- 1 courgette
- 1 tbsp olive oil
- 1/2 garam masala
- 1 red chilli, de-seeded and finely chopped
- 1 garlic clove, chopped
- 1/2 lemon, juiced
- 2 naan breads
- ricotta cheese, as much as you like!
The method is pretty simple. Slice the courgettes into very thing slices, or use a wide peeler to do this. Cover them in the oil and then sear them in a griddle pan for no more than 20 seconds on each side. Once you've done this, mix them with the garam masala, red chilli, garlic and lemon juice. Arrange this on the naan bread and then dot the ricotta as liberally as you would like. Bake in the oven for 10 minutes (180 C) until the bread themselves are hot.
Eat and enjoy!
We've done this recipe a couple of times now and found that it can actually taste quite different depending on which brand of naan breads you choose to use. We've gone for plain ones so far, but even still different ones do taste a bit different and differing size can also make the distribution of toppings different, altering the overall taste. Using alternative flavours of naan would add an extra twist.
What I did like about this (apart from helping with any courgette glut) is how simple they are to make, yet they taste really rather swish.
